Catchin’ up with Mama =D

My Mama happens to be super busy –why, between catching up with her 3 Children (I’m her favorite –duh!  LOL), having a full time job, her many charity works with my Dad (being a wife too), and being super involved in their Church.  I usually only get to see her on Sundays (her only day “off”).  I recently got the chance to not only laugh and chit chat with Mom, we were also able to Cook and Eat together.  Now, as most children are, we tend to be biased.  Ain’t nobody can cook up some yummies like MOM!  I remember as a child, the smells that I would wake up to sometimes and just knowing that it was Mom in the Kitchen making something yummy.  It made you feel safe, like you were at home in a nice and warm place.  Nowadays, I’m lucky if Mom has the time to set the rice cooker on anymore, lol.

So, here is a little peek into Me and Mama in the Kitchen =D

Bulgogi Korean BBQ

Ingredients

  • 1 lb of Ribeye (throw it in the Freezer for just a bit for it to firm up so you can hand slice it very thin)
  • 1/2 of a small Asian Pear (or any Pear or Apple will work in a pinch)
  • 4 cloves of Garlic (you can add up to 8 if you really like Garlic)
  • 1/2 small Onion (slice the other half to throw in half way through the cooking process for texture)
  • 4 tb Soy Sauce
  • 2 tb Sesame Oil
  • 2 tb Brown Sugar
  • 2 ts Sesame Seed
  • 2 Green Onions
  • 1/4 c Coke, if you have it
  • S & P to taste
  • For the Samjang
  • 2 tb Fermented Soybean Paste (Daenjang)
  • 1 tb Red Pepper Paste (Gochujang)
  • 1 ts Sesame Oil
  • 1-2 ts Sesame Seed
  • 1/2 ts Honey/Agave
  • 2 cloves of finely minced Garlic
  • Garnish with Green Onions/Scallions

Instructions

  1. For both the Marinade and the Samjang, it’s just a matter of mixing.
  2. Using a food processor to pulse everything together makes it easier.
  3. Allow your Beef to sit in the Marinade for as long as possible. (Overnight is great)
  4. Grill outdoors or over a grill pan.

These make fabulous Asian Inspired Tacos/Burritos.  They’re also great in the Kim Bop/Bap, Bibimbap (Korean Mixed Rice Dish), even a Korean Style Philly Cheese (I had some with Provolone and a nice fat smear of good Mayo on a nice crusty roll the other day with some left over Bulgogi and it was AH-Mazing!!

Grilling this outdoors makes it the Bomb.com (too cold here) :(

Mom, you’re the best. I love you so very much.  You and the Family are the constant inspirations for me to be the best version of myself.
