Apple Cider Donuts

Since I can no longer go trick or treating, this was my version of festive October fun.  I always had homemade costumes as a kid and went as a princess several times.  What would you dress up as?

Ingredients
  • 10.5 g yeast
  • 1⅓ c apple cider
  • 60 g melted unsalted butter
  • ½ c whole milk
  • 84.5 g sugar
  • 2 eggs
  • 470 g flour
  • ½ ts fine salt
  • 1 ts baking powder
  • ½ ts baking soda
  • ½ ts cinnamon
  • ⅛ ts nutmeg
  • ⅛ ts allspice
  • ⅛ ts cloves
  • Oil or shortening for frying
Glaze
  • 3 c powdered sugar
  • ½ c apple cider

Instructions
  1. Gently warm your apple cider but make sure it’s not hot or it will kill your yeast. Sprinkle in your yeast. (Mine read at about 105)
  2. In a mixer, tip in all the following: butter, milk, sugar, and eggs. Mix to combine.
  3. In a separate bowl, weigh out and sift your flour, salt, baking powder/soda, and spices.
  4. In 3 or 4 separate additions, combine your flour mixture with your wet mixture.
  5. Cover with a towel and allow your dough to rest for 60 minutes in a warm/draft free place. (A cold oven or pantry works fine).
  6. Afterwards, on a lightly floured surface, knead your dough for about 5 minutes. You want to make sure you don’t add in too much flour or your finished product will be tough and dry.
  7. Roll out your dough to about a ¼-1/2 ” thickness and cut out donut shapes.
  8. Heat up your oil to 350-375 and fry in batches. Allow to cook 1-2 minutes on each side.
  9. Scoop with a slotted spoon and allow to drain and slightly cool.
  10. To make the glaze, whisk together the sugar and cider. Submerge each side of your donut into the glaze and sit on a cooling rack to set.
  11. These are best eaten the day of.

    I’ve never been to apple picking before and now that I have kids, I’d love to find some orchards in our area. Your donuts… my goodness. How am I supposed to look away… looks so yummy. Very interesting to see apple cider in the recipe and would love to have a piece (or more!). :)

    apple cider donuts bring back good memories…..my parents used to beat me and throw me in a closet…..but there was always some warm apple cider donuts waiting for me in the depth of the closet – OK so that story is not true but I still like the donuts…

    Your donuts looks so good! Love the video! I do think that one of the best parts of apple picking is the fresh apple cider donuts you can get at the farm stand. I’m used to seeing ones of the cake donut variety, so I’m interested to try a yeasted one (like the ones you made).

    I so love Halloween. I don’t remember dressing up much when I was young but, I do every year now to pass out candy. I’m still not sure what I’m going to be this year and it’s getting so close…eek! My friend’s parents own a farm called the ‘Pumpkin Farm’ and it’s only open in October, I love to go there it’s so much fun. They have the animals too :) Your donuts look immensely good, I’ll be over shortly

    My dreams are always delicious, to be quite honest, part of the reason I’ll even bother getting up instead of hitting the snooze a million times is that I know that hot eggs and bacon are awaiting downstairs, to actually eat and not just dream about, lol.

    This is the first year that the kids haven’t had a field-trip to the Apple Farm/Pumpkin Patch. That just means we’ll have to go on our own time Warm apple cider is another one of my favorite Autumn drinks, with or without a camp fire.

    I donut remember many of my costumes over the years but I do recall going as GI Joe a few times and also as a Hobo Clown in the style of Red Skelton. :) I always got a thrill out of using burnt cork to give myself a beard & moustache as a child. If young me could only see me now.

    We used to go apple picking in Philadelphia, and my favorite part was getting some hot apple cider and apple cider doughnuts!! Love the glaze on yours. Now I’ll have to make my own, since there is no apple picking in Hawaii :)

    I love that you use apple cider in the glaze! I’ve made quick apple cider doughnuts (the dough used a bisquik to make) and then coated them with cinnamon sugar like you did with the holes and they were great, but I think I’d like to try that glaze though! (Psst! Your recipe says “1 1/3 cups apple cider vinegar.”)

    Apple cider donuts sound great! Two of my fall faves in one. I also love how it’s a yeast donut, as I’m not a huge cake donut fan.

    I made some yesterday and they were a huge hit. I did substitute with whole wheat flour. My consistency came out super sticky and I added probably another cup or two of flour and was praying that it would still be fine. I think I just have to learn to work with the sticky dough. Can’t wait to try again either today or tomorrow!Thanks for sharing!
