Honey Cornbread

I still have honey left over from Skinny J Farms and I’ve had so much fun experimenting with its different uses that I couldn’t wait to share with y’all!

I’ve been popping theses fun bites into my mouth throughout the day and they provide instant bursts of energy from a mixture of dried fruits, nuts, and seeds {I used dates, cranberries, pistachios, almonds, flax seeds, and sesame seeds}.  Think about variety and texture….goji berries, pumpkin seeds, walnuts, coconut, chia seeds, apricots, wheat bran/germ, nut butters, even chocolate!  I stirred about 1/4-1/2 c of each with about 1/4-1/2 c of honey and let them set in the fridge.

Honey is also what I used to sweeten my pineapple/basil infused white tea…so yummy!

Ingredients
  • 2 c cornmeal
  • 1 ts fine salt
  • 1¼ c full fat sour cream
  • 1 egg
  • ¼ c melted unsalted butter
  • ⅓ c honey

Instructions
  1. In your first bowl, sift together your cornmeal.
  2. In your second bowl, whisk together your sour cream and egg.
  3. Slowly stream in your melted butter to bowl number 2.
  4. Lastly, whisk in your honey.
  5. Combine your first and second together slowly, being mindful not to over beat.
  6. Bake at 350 in a well greased tin for 25-30 min

 

Honey also makes for an incredible face mask.  I simply pat it on and leave it for up to an hour and follow up with an undiluted apple cider vinegar “toner,” and use coconut oil to moisturize.  You could also spruce up this plain mask with the addition of any of the following: avocado, egg yolk, yogurt, lemon…even aspirin!

Lately, I’ve also been swearing by it for my allergies.  A spoonful of honey seems to keep the sneezing and itchies at bay {the trick is to get your hands on some good, pure honey that isn’t just “honey syrup” which a lot of commercial brands pass off as “honey”} and speaking of, Timothy F. is the winner of the honey giveaway…please contact me by the end of the weekend.

Honey is what I also often use to finish off my squid stir fry it’s simply divine when drizzled over roasted Korean sweet potatoes, {Goguma} among other dishes…the possibilities are endless!
