Marshmallow Frosting

Marshmallow fluff is the stuff of kids dreams.  It’s sticky and sweet, fluffy and gooey but it’s fair to say, it can get out of control pretty quickly as it’s really sticky and really gooey.   However, when tamed into a quick and easy marshmallow frosting, it behaves beautifully and looks gorgeous when piped or slathered onto baked goods.  The best part is that it only takes about 10 minutes to whip up with just 6 simple ingredients {one of which is optional.}  It’s of a puffier mass than traditional buttercream frosting and has an almost airy mouthfeel.  It’s a nice deviation from the more denser frosting and spreads beautifully and sets well, making it a pretty awesome go-to frosting.

I made a batch of brownies the other day that looked pretty naked.  I figured I could take the easy route and dust with some powdered sugar but a quick scan of my fridge and pantry produced marshmallow fluff and strawberry jam and so, this strawberry marshmallow frosting was born.  I loved its pretty pale pink strawberry scented swirl on top of each little brownie cup.  This marshmallow frosting would also be excellent when sandwiched in between 2 whoopie pies or moon pies…gosh, when I was a kid, I used to gobble those up like they were my job.  I digress.  There’s a multitude of uses for this frosting and I find it easier and faster to make than most other frostings so I hope you’ll give it a try for your next project.  More goodies, less work, yes, please!

Marshmallow Frosting

Ingredients
  • 1 c room temperature, unsalted butter
  • 2 c marshmallow fluff
  • 1 c sifted powdered sugar
  • 1 ts vanilla extract
  • ¼ ts fine salt
  • ½ c seedless strawberry jam or jelly (optional)

Instructions
  1. Cream together your butter and fluff until nicely well blended and fluffy.
  2. Begin sprinkling in your powdered sugar, periodically scraping down the sides of your bowl.
  3. Tip in your vanilla, and salt.
  4. Lastly, blend in your jam/jelly.

This frosting would also be fun to spread on sugar cookie cut outs or s’mores cupcakes too!
