Asian Glazed Salmon

When temperatures reach in the 3 digit range, the last thing you want to do is slave over a hot stove.  This recipe is fast and easy with just 3 steps {whisk-brush-bake} and only runs your oven for 15 minutes tops.  Now regrettably, I don’t own a grill but this would be just as easy on one as well.  I served mine on a simple watercress salad with rice and kimchi on one of those busy days where you can’t seem to catch your breath.  It was so much more nourishing and satisfying than a greasy fast food bag and I didn’t feel like I had to stress about dinner.  I encourage you to try this next time you have a million and one things to do {or you’re craving a nice piece of salmon}

Ingredients
  • ¼ c soy sauce
  • 2 ts sesame oil
  • 2 tb pineapple juice
  • 1 tb honey
  • 1 ts minced ginger
  • 1 clove minced garlic
  • 2-3 salmon fillets
  • Optional: green onions or sesame seeds.

Instructions
  1. Whisk together soy sauce, sesame oil, pineapple juice, honey, ginger and garlic.
  2. On medium heat, allow it to bubble and thicken. Whisk constantly.
  3. When it’s nicely reduced (it took me about 10 minutes), brush it on your fillets.
  4. Bake or grill. Mine took 13 minutes in the oven at 350.
  5. Garnish with green onions or sesame seeds
