Chicken & Waffles {with Sriracha}
Yes, I know. A certain Squishy Monster seems to want to make everything spicy. I mean seriously, the best ice cream I had all Summer was the spicy Mexican chocolate during my trip to Asheville. There’s something about that building heat that’s just so…{dare I say it?} …sexy. It’s exciting, thrilling, jolting! Here in the south, it’s a classic staple to have chicken and waffles so I decided to inject my own spin on it with some of that delish homemade sriracha. Yes and yes.

Chicken & Waffles with Sriracha

Serves: 2-4
Ingredients
Chicken
- 2 c whole buttermilk
- 2 tb sriracha
- 5 lbs chicken
- 2 c unbleached flour
- 1 tb baking powder
- Salt and pepper
- 3 c canola oil + ½ c bacon fat
Waffles
- ¾ c unbleached flour
- ¼ c cornstarch
- ½ tb baking powder
- 1 ts baking soda
- ½ ts salt
- 1 c whole buttermilk
- ⅓ c canola oil
- 1 egg {divided}
- ¼ ts cream of tartar
- 2 ts sugar
- vanilla or almond extract
Honey Sriracha
- ½ c honey
- 2 tb sriracha
Instructions
- Whisk together the buttermilk and sriracha. Submerge the chicken pieces and allow it to bathe overnight (or 2-3 hours if pressed for time).
- Next, dredge each piece in the mixture of flour, baking powder, salt and pepper.
- Heat oil/fat to 350. Fry in small batches (to prevent overcrowding the pan or lowering the heat). They’re ready when the internal temperature reads 165.
- For the waffles, sift together the flour, cornstarch, baking powder, baking soda, and salt. Slowly whisk in the buttermilk, oil, egg yolk, and vanilla.
- In a separate bowl, whisk the egg white until frothy then add in the cream of tartar. Slowly sprinkle in the sugar and beat the whites until they achieve a stiff peak.
- Fold the stiff egg whites into the waffle batter and cook per waffle iron instructions.
- For the honey sriracha, whip both together and drizzle over the chicken and waffles.
Notes
If you don’t like the heat, omit the sriracha altogether {but why would you want to do that}?

I had honey and chicken waffles at this American-inspired restaurant in Melbourne earlier this year. I initially thought it was the strangest thing on the menu but was surprised to find that it works. My bf and I have been talking about fried chicken all weekend now so I’m going to make it later this week.
