Pumpkin Cheesecake Truffles

These taste like little bites of Heaven.  Being a delicious and decadent cross between a chocolate truffle and a pumpkin cheesecake, the best part about these are that they’re completely no bake.

Serves: 1-2 Dozen
  • ¼ c drained pumpkin puree
  • 1 c crushed gingersnaps
  • 4 oz room temperature cream cheese
  • ½ ts pumpkin spice
  • ¼ c sugar
  • 16 oz melted white chocolate
  1. In a food processor, blend everything together {except the chocolate}
  2. Chill the mixture overnight.
  3. Scoop into balls.
  4. Melt chocolate and dip the balls and set over wax/parchment.
  5. Sprinkle with cookie crumbs if desired. Allow to set and serve.
Does not include chilling time.
