Snowball Cookies

Also known as Mexican wedding cookies, Russian tea cakes, Butterballs, Polvorones, Nutballs, and a dozen other names, one thing that remains is that they taste like buttery, nutty sugar/shortbread cookies covered in fine “snow” {powdered sugar} making them taste like Christmas in your mouth.

Ingredients
  • 2 c unbleached flour
  • ¼ ts fine salt
  • ½ ts cinnamon {optional}
  • ½ c toasted, chopped nuts {walnuts, pecans, hazelnuts, almonds, etc}
  • ⅓ c sifted powdered sugar
  • 1 stick soft, unsalted butter
  • 1 ts vanilla {or nut} extract
  • 2 c powdered sugar {for rolling}

Instructions
  1. In the first {dry} bowl, mix the flour, salt, cinnamon {if using} and nuts together.
  2. In the second {wet} bowl, cream together the butter and sugar. Add the extract.
  3. Combine the first and second bowls together in thirds, taking care not to over mix.
  4. Scoop out and bake at 350 {for my miniature scoops, it took 13-17 minutes}
  5. Once they’ve cooled a bit, roll in the powdered sugar.
  6. Let them cool completely and roll in powdered sugar once again.
