Chicken Wings, Baked Not Fried
Despite never touching a fryer, this method ensures a deep golden brown crunch every time. My two favorite flavors I like to rotate are my honey sriracha and these mango habanero wings.

Serves: 2
Ingredients
- 1 lb chicken wings
- 1 ripe, cubed mango
- 2 chopped habaneros {de-seeded if you’d like}
- Salt and pepper
- ¼c-1/2c brown sugar
Instructions
- Boil the chicken wings for 8-10 minutes.
- Drain and pat dry thoroughly.
- Bake at 500 for 25-35 minutes on a greased baking sheet, rotating when the skin releases from the pan.
- Cover the mango and habaneros with water {with about 2″ on top} and simmer on medium-low until it gets tender.
- Cool and puree with salt, pepper, and enough brown sugar to taste.
- Toss the baked wings in the sauce and serve.

I adore baked chicken wings and your recipe is perfect in terms of timing for the Super Bowl. This year, in efforts to eat lighter, I’m not going to make wings, instead I’m baking Buffalo cauliflower florets…we’ll see how well that goes over.

Do I need to thaw the wings ahead of time or is frozen okay?

This is a great question. It’s always a great practice to bring the meat to room temperature. I imagine you can add on extra time to the boiling process if frozen though I haven’t done it myself. I would highly recommend thawing them out in the refrigerator then setting them out at room temperature about 30 minutes before you’re about to use them.
What am I doing wrong? I baked as mentioned on a greased pan and the chicken is sticking to the pan. I flipped them after 20 minutes went by. How do you get them where the skin doesn’t get ripped off?
Different temperatures run a bit differently, hence my 25-35 roasting time. The skin will naturally pull away when it’s ready because it’s developed a golden crispy skin, no need to rush it along. Near the end mark, check on it and keep your eye on it. It all depends on how hot your oven runs, how large your chicken is, etc. Stick with it though, my friend. The end result is well worth it without the additional need of a fryer. Keep me updated and let me know how it goes =)
Do you have to use oil for these to be crispy? Could you use something like non-stick spray instead? Just curious.
You could but for the crustiest exterior, I’d stick with oil. You can always use a heart healthy oil too =)
