Biscuits, Soft & Fluffy

biscuit1-2

I can’t rave about these biscuits enough.  As we eat a ton of biscuits here in the south, it was only appropriate to take the time and consideration to perfect this recipe.  They are as omnipresent as sweet tea and this particular recipe bakes up fluffy, tender, and pillowy biscuits with a flaky crust that when {in my opinion} are served hot with a heavy handed drizzle of honey, are to die for.

Serves: 1 Dozen

Ingredients
  • 2 c bread flour
  • 1 tb + 1 ts baking powder
  • 1 ts baking soda
  • 1 ts fine salt
  • 1 ts sugar
  • 12 tb frozen, shredded butter
  • 12 tb whole buttermilk
  • Melted butter for brushing
  • Flour for dusting

Instructions
  1. In a large bowl, combine the flour, powder, soda, salt, and sugar.
  2. Add the frozen butter and buttermilk. Mix to combine. Do not over work.
  3. Scoot out onto a lightly floured surface and quickly bring together with your hands. Gather the dough into a thick, flattened disc.
  4. Roll out the dough to about 1-2″ thick.
  5. Cut out circles. If you have the time/patience, pop these circles into the fridge for 15-20 minutes.
  6. Bake with the sides touching each other in a 450 oven for 16-19 minutes.
  7. Brush with melted butter.
