Mini Chocolate Donuts {Baked}

My only regret in life?  Not ever owning an easy bake oven.  {Kidding…kind of}  Boy was I envious of all my friends that would have me over to watch as miniature treats would magically emerge from that iconic pink oven.

Ah, sweet nostalgia.

So when I saw this miniature donut pan at the shop, the inner kid me in yelped for joy, while the adult in me calmly walked up to the counter to pay and gleefully smile as I drove home to make these.

Ingredients
  • ½ c unbleached flour
  • ¼ ts baking powder
  • ⅛ ts baking soda
  • ⅛ ts fine salt
  • 2 tb melted chocolate
  • 1 tb sour cream
  • ¼ ts instant coffee
  • ⅓ c brown sugar
  • 3 tb canola/veggie/grapeseed oil
  • 1 egg

Instructions
  1. In the first bowl, whisk together the flour, baking powder/soda, and salt.
  2. In the second bowl, whisk together the cooled melted chocolate and sour cream.
  3. Still working with the second bowl, blend in the coffee, sugar, oil, and egg.
  4. Fill a well greased miniature donut pan ¼ of the way full and bake at 350 for 4-6 minutes.
