No-Bake Pumpkin Pie
I love pumpkin pie but faced with the prospect of baking several pies in a few weeks on top of Thanksgiving supper, I figured I’d whip up a no-bake version for myself when the craving was fierce but the effort must be kept to a minimum. Cue this layered custardy treat that involves no baking at all. It features a creamy spiced pumpkin filling with homemade whipped cream, and a crunchy cookie bottom–there’s even a fluffy whipped cream cheese layer involved. Happy baking!
- 1 c pumpkin puree {not filling}
- ¼ c brown sugar
- 1 ts pumpkin spice
- 1 tb cold heavy cream
- Pinch of fine salt
- 4 oz room temperature cream cheese
- ½ c sifted powdered sugar
- 2 tb cold heavy cream
- 1 ts pure vanilla extract
- Pinch of fine salt
- ½ c cold heavy cream
- ¼c-1/2 c sifted powdered sugar
- 1 ts pure vanilla extract
- Combine all the ingredients for the filling. You can either mix it by hand or use a food processor for a smoother filling. Cover and chill until ready to use {though the longer it sits the better}
- Combine all the ingredients for the whipped cream cheese. Again, you can mix it by hand or use a food processor.
- Combine all the ingredients for the whipped cream, whisking by hand or using a mixer.
- To assemble, layer cookie crumbs, pumpkin filling, whipped cream cheese, and whipped cream. Alternate as desired and top with more cookie crumbs.

What a clever idea. I’m going to try this recipe (along with the must-bake pie just to feel American)

This is my kind of recipe.
This is a great recipe for those of us who are experiencing summer weather Angela
pumpkinlicious! i think u switched for a bigger glass full at the taste test time. hahaha
Oh what a great verrine, love the idea of no bake here for a seasonal must treat.
Oh, Angela, this looks just divine. I love anything custardy and puddingish. (Those are words, right?) I am not the world’s biggest pumpkin pie fan — texture thing — but I think I will have to try this since it’s not baked! Really sounds divine, and I love the idea of serving it in little jars. Smaller portions are so nice at Thanksgiving so you can eat a lot of everything!
That looks so good! Loving your videos Angela, you’re so bubbly!
Yum – this looks so easy and delicious!
I love no baked recipes and this one is so simple and the results are so decadent. Thanks for sharing this

All of this – YES!
I am a sucker for pumpkin pie but a no bake version sounds even better to me since I always have trouble with rolling out the pie dough. It looks so pretty in the jar too!
Get in my belly! Yes….. Allllll the yes. Looks stunning too.
