St. Croix Point Udall

I think one of my favorite things about the island is its wild and natural state.  When we got married, we made a promise to never forget what it’s like to be wild and free.  The island understands that.  Large areas are unpaved and just the road leading up to our cottage is a 15 minute trek uphill with craters of jurassic sized proportions made even worse any time it rains as it washes away the “road.”  But in exchange, the lush vegetation framing these routes softens the rough journey to your destination.  The landscape never ceases to take my breath away.  Full and resilient, the varying shades of green get accented by the bright pinks and yellows of the local flowers.  I wake up each morning breathing in the fresh air that rushes in from all of our open windows and smile as the sun kisses my face.

With the abundance of green comes exotic fruits that literally fall from the heavens.  We have taken walks when ripe fruit has fallen to our feet to conveniently be collected in our ready bags for fresh mixer for all the free flowing rum here.  We have an endless supply of homemade “fruit punch” in our fridge if the fruit doesn’t make it to the freezer to be blitzed into creamy, chilled concoctions later.  Fruit smoothies used to be an expensive habit but now, mango lassis, nice-cream, and fresh pina coladas and the like are part of our every day experience and for that, I am grateful.

In today’s video, I show you a peek into our mini fruit haul that includes carambola {star fruit}, mango and of course, a million bananas.  I also show you an ordinary day of eats for us.  This particular weekend, J was so gracious to whip us up a Korean supper with my crab stew recipe.  We also visited an old established mom + pop sandwich shop called Victor Mencho’s to enjoy their twist on a cubano {said to be the best on the island} and visited Point Udall again, which is said to be the easternmost part of the United States.  Lastly, continuing with our third installment of our Q&A series, we answer some of your questions like what our hardest adjustments were, how expensive/affordable the island is and what we personally enjoy doing with our time off.

    get ceiling fans and windmill/solar panels! unless they purposely ban it on the island to price gouge the residents!?

    Hey, Brain! The trade winds keep things deliciously cool and since we’re renting right now, I don’t think we can invest in solar panels till later. We have some neighbors that are “off grid” and we’re aspiring for the same down the road =)
