No Bake Superfood Brownies

New year, new you.  Or at least I imagine that most folks are aiming to get healthier for the new year.  I can just about jump on any green juice-yoga-superfood band wagon unless there’s a threat to my dessert.  I’m big on dessert so I figured out a way to have my cake and eat it too, if you will.  For all the millennials that are anti refined sugar, carbs, fat, gluten, etc, etc, etc, never fear, you don’t have to give up sweets!  My superfood brownies are happily raw, vegan, paleo, gluten and refined sugar free.  The best part?  They’re 100% no bake and chock full of superfoods and completely fudge-y, chocolate-y and scrumptious….oh and there’s chocolate sauce involved.

Cacao is an ingredient that I often use in my face masks but it’s also my primary go-to in “nice cream” {which is another healthy dessert I pretty much enjoy daily}.  Today, it’s used in a more typical application with dessert.  Don’t let the “healthy” part fool you though, these are every bit as full of chocolate flavor as their decadent counterpart.  Raw cacao hasn’t been adulterated with heat, maintaining its integrity, unlike cocoa.  It’s full of good-for-you antioxidants.  I highly recommend popping some cacao nibs {a healthier alternative to the chips} on top if you have some for both texture and flavor.

Flax is a good source of fiber and omega-3 essential fatty acids and the powder is better absorbed than the whole seed and since it’s not being heated, they retain much of their benefits.  The dates are used here not only as a natural sweetener but to also impart a chewy consistency that when blended with the cacao, turns into a dense, fudge-y mixture that melts in your mouth.

When you whirl all of these with a hit of salt and vanilla to enhance the flavors, they marry into a delicious treat that you can feel good about enjoying.  It’s effortlessly delicious and healthy to boot, which will certainly put you on the right path for the new year.

No Bake Superfood Brownies

Serves: 8-12 mini brownies

Ingredients
  • ½ c ground oats/oat flour
  • ½ c ground flax
  • ½ c cacao
  • 2 c chopped dates
  • Pinch of salt
  • 1 ts pure vanilla extract
  • Optional: 1-2 tb water
Chocolate Sauce
  • 2 tb cacao
  • 1-2 ts water
  • 1 tb sweetener of choice
  • Optional: salt sprinkle

Instructions
  1. In a blender {preferably a food processor}, blend the oats, flax, cacao and chopped dates. Soak your dates beforehand if they’re too dry or add 1-2 tb during blending. Your mixture should clump together.
  2. Form into your desired shape and chill while making the chocolate sauce,
  3. Whisk the cacao, water and sweetener and drizzle onto your brownies.
