Korean side dishes are a must-have for every proper Korean meal.  I exaggerate not.  Sure, it may seem luxurious to have several little dishes of different tasty banchan {side dishes} out to accompany each meal but that’s what makes Korean food special.  However, it’s not always feasible to make such a grand affair of it all, especially if you’re having a full spread a couple times a day, every day.

My mother was, well, the mother of ingenuity in my eyes.  She taught me how to be resourceful in the kitchen as well as instilling in me the love of food which is why I’m dedicating this video to her today on her SIXTIETH birthday!  Each of these three side dishes greatly reminds me of her as she used to whip up something incredible, even on those lean pantry/fridge days.  Sometimes, it wasn’t possible to produce kimchi on the busiest of days so she would often hammer out a quick and easy substitute with either regular cabbage or romaine lettuce with flavors that mimicked traditional kimchi.  Additionally, she always had a knack for repurposing whatever was in the fridge into tasty banchan.

3 NO COOK Korean Side Dishes

Today, I bring you a sesame rubbed kale salad, sweet and spicy squid jerky and red cabbage “kimchi.”  Each one is completely no cook and all of them can be made in about 10 minutes.  They make for perfect bibimbap, bento boxes or to serve the classic way with rice and soup.  You really can’t go wrong with these as they’re fresh, fast, healthy and delicious, each with its own unique texture and flavors.  The kale imparts a subtle smokiness from the toasted sesame oil.  Massaging it helps to break down the tough fibers and makes it pleasantly palatable, even when served raw.  The tender chew of the squid jerky soaks up the sweet gochujang sauce and the “kimchi” brings that familiar zip and brightness to the meal {in a fraction of the time!}

Ingredients
Sesame Kale
  • 2 c chopped kale
  • 2 minced garlic cloves
  • ½ tb toasted sesame oil
  • 1 tb soy sauce
  • ½ tb pure maple syrup
  • Sprinkle of toasted sesame seeds
Squid Jerky
  • 2 cups of dried, shredded squid.
  • 2 ts of Korean pepper paste
  • 1 ts toasted sesame oil
  • 1 ts pure maple syrup
  • 2 cloves minced garlic
  • 2 ts of toasted sesame seeds
Red Cabbage Kimchi Slaw
  • 2 c shredded red cabbage
  • 1 tb Korean red pepper flakes
  • 2 cloves minced garlic
  • 1 tb raw apple cider vinegar
  • ½ tb pure maple syrup
  • Salt to taste

Instructions
  1. For the sesame kale, combine all of its ingredients {except the sesame seeds} and massage the leaves to combine the flavors and break down the leaves. When it wilts down to about half its original volume, sprinkle with sesame seeds.
  2. For the squid, combine everything and mix well.
  3. For the cabbage, combine everything and mix together as well.
