What I Eat In A Week – Charlotte Edition

The best part of being back in Charlotte is getting to spend quality time with family and friends we haven’t seen in 2 years.  Otherwise, I find the city to be overwhelming.  Charlotte has exponentially grown in the past few years and plots that once used to hold fields of tall grass have now transformed into strip malls or residential neighborhoods.  Similarly, the food scene has now exploded and I’ve been a happy little glutton gobbling up all the goodies.  From dim sum to back to back home cooked meals for my loved ones, it’s been a regular feast.

Fresh pad thai was one of my first restaurant stops and over fiery noodles and curry, I unraveled the day with my mother and baby brother, David {who really isn’t a baby anymore} laughing until we cried, as can be witnessed in the video.  Ms. Nala has been in doggy heaven with all of the attention showered upon her.  David is pretty much obsessed with her and I’ve eavesdropped on many conversations between Nala and my father.  She especially likes to keep him company while he plays music and lays contently at his feet.

There have been so many countless family suppers that it’s all become a delicious blur and many, I’ve forgotten to snap a photo of or document on video but suffice it to say that I’ve made up for all the lost time on missing Korean food on the island.  Hard-to-source ingredients there are plentiful here and many spicy seafood stews have returned to my life.  One of my happiest moments in life is when I’m surrounded by my loved ones, warm in the glow of the communal feasting of food that I lovingly created with my own two hands.

As difficult as it’s been to coordinate everyone’s schedules {baby bro is working 2 jobs and burning the midnight oil}, I’ve tried my best to plan family outings and one of our most recent ones was to South Mountain’s State Park where we hiked up to the top and had a classic grill out.  It was nice to get some fresh air and spend time with my family out in nature.  Plus, Nala was in great spirits, being back in her element, despite it being a bit cooler than she’s used to.

That’s been an adjustment as well.  I’m so used to living life in shorts and flip flops that I almost forgot what being cold felt like.  However, it’s been wonderful to see the leaves change and to experience autumn.  I’m already excited for the holidays and knowing that we’ll at least definitely get to spend Thanksgiving, my favorite holiday, here with our family.

Foolproof Sushi Rice

Serves: 4 rolls worth

Ingredients
  • 1 c sushi rice/short grain sticky rice
  • 1 tb rice vinegar
  • ½ tb sugar
  • ½ tb salt

Instructions
  1. Wash and rinse the rice at least 3 times.
  2. Drain well. Add 2 cups of filtered water and cook.
  3. Afterwards, while the rice is still warm, pour in the rest of the ingredients.
  4. Use a fork to fluff it up.
