Beginner Vegan + Losing 20 lbs and Digestive Issues

Beginner Vegan is not just an e-book for me, it’s what helped me get through one of the more difficult chapters of my life.  It also coincided with my research into factory farming, animal abuse and my interest in the research involving the diet and mental health connection.  I personally realized there was truth to this as I went from being a person with low energy, plagued by digestive issues in a significantly depressive state to someone in the best health of her life {more on that below}.  With all the happenings surrounding Maria, I had a lot of forced time offline which encouraged me to delve into other projects.  One of my proudest projects is the creation of my new e-book, Beginner Vegan.  Throughout the years, I’ve often been asked about vegan swaps for my existing video recipes.  I soon realized that my natural inclination towards plant based foods paired with the fact that many Korean dishes are already vegan friendly had already put me on this path. I had gathered a notable vegan subscriber base as well which I think correlates with the rising awareness of where our food comes from.  It’s actually you guys that inspired my vegan cleanse.

I spent several months between Charlotte and St. Croix recipe testing and perfecting them for this new e-book.  An upside to all the moving around is that I had a diverse group of people to try my recipes out on.  I have to say, the process of crafting this e-book together was quite different than the one for Moving to Paradise.  However, I found it to be a delicious challenge to bring you recipes with lots of love, trial and error like the best black bean brownies or my favorite all-purpose sauces to a number of Asian inspired dishes.  Every single one of these recipes are now very much loved and in my permanent repertoire as part of the “diet” that made it effortless to lose all the weight, gain freedom in health without any calorie counting or restrictions.

All 20 of my recipes are easy to make using simple ingredients as well as being wholesome and satisfying.  I worked hard on implementing different flavors and textures to make your vegan adventure exciting and flavorful.  15 of my 20 recipes are also naturally gluten free and convenient to pack on the go or to meal prep for later.  Beginner Vegan is a wonderful resource whether you’re curious about vegan eating, undergoing a vegan cleanse or challenge, looking to make healthier food choices or already vegan and looking for some fresh inspiration.  You’ll find 90 pages of pictures, step by step directions, tips, encouragement, exactly what happened after I went vegan, my inspirations, my master grocery list and specific diet plan that led me to effortlessly lose 20 pounds {no calorie counting} and completely eliminate my digestive issues, all while leading a lifestyle of compassion and abundance.  This lifestyle helped me not only free myself of regular cramps, bloating, heartburn, and indigestion, I also gained increased sustained energy, healthier hair, skin and nails, increased my awareness of my health, my environmental impact and the conditions of factory farming all while saving money.  We actually saved so much money, it funded our recent African Safari.  Best of all, I’m happy to report that a recent doctors visit confirmed that I’m in the best health of my life!

Disclaimer: this is what worked for me with the supervision of a physician.  I allowed food to be my medicine and used it to treat my cramps, bloating, heartburn and indigestion.  Losing weight, increased energy and healthier skin, hair, and nails were all a positive by-product of this journey.  This was initially undertaken as a vegan cleanse and I have come to realize that today, I thrive best when incorporating tons of alive, plant based foods into my diet.  Even if you are a staunch disbeliever in the vegan lifestyle, this e-book introduces wholesome satisfying recipes to deliver more plant based foods and healthier alternatives into your life.  It serves to lend inspiration and encouragement.
